PINEAPPLE CHICKEN KABOBS
Drain 1 can (20 oz.) Pineapple Chunks. Thread pineapple chunks, 1 lb boneless, skinless chicken breasts, cut into cubes, a red or green bell pepper, cut into chunks, q red onion, cut into chunks and cherry tomatoes onto skewers. Brush with 1/3 C Italian salad dressing or barbeque sauce. Grill or broil kabobs 10 to 15 minutes or until chicken is no longer pink, brushing with dressing. Discard remaining dressing. Makes 4 servings.
Grilled Chicken - Cook it in the microwave for about 20 minutes first, then put the sauce on and put it on the grill. It comes out so tender and juicy.
Portobello Mushrooms - Take the stems out and pour in some sort of dressing. You can use Caesar Salad dressing. Place the mushrooms cap
down on a piece of foil, pour the dressing in the caps and grill for about l5-20 minutes. You can also grate fresh Parmesan cheese
on them right before you take them off the grill. YUM!
Vegetables in "foil pans" - They come out tender and full of flavor. Turn a pan upside down and fold foil over the bottom to form a "foil pan". Slice zucchini, or any other vegetable you choose, and toss with italian dressing. Place in foil pan and cover with another piece of foil to form a lid. Place on grill over medium coals for about 20 minutes. Cooking times may vary due to coals.
Corn on the Cob - Place ears in ice water for 30 minutes, rub with butter and season to taste (parmesan), wrap in foil and place on grill for 20-30 minutes. Don't wrap too tight or steam can't flow around corn.
Potatoes - Wash potatoes and boil till done. Slice in 1" thick round slices and marinate overnite or for several hours in Italian salad dressing with parmesan cheese. Then lay them on the grill and brown on both sides. A non-stick vegetable rack works best on the grill so they don't stick. A Tupperware Season-N-Serve Marinator is great to marinate
them in.
Chicken Breasts - Marinate boneless chicken breasts in Italian salad dressing, which is great alone or on a roll sandwich-style. Also marinade chicken and "cheaper cuts" of steak in Chiavetta's barbecue marinade (may be regional - Western NY).
Shrimp - Take a pound of bacon and cut strips in half (or quarters, if desired). Wash and peel medium or large shrimp. Marinate shrimp in melted butter and seasonings of your choice. Wrap each piece of shrimp in a strip of bacon, and place on skewers. You can also put chunks of raw veggies in between (onions, red & green peppers, or pineapple chunks!). Grill on each side until shrimp is pink and bacon is cooked. Delicious!
More Veggies - Yellow squash and zuchini, split lengthwise, brushed with oil and sprinkled with seasoned salt and grilled until done are great.
Vidalia Onions - Split in half crosswise, brush with oil and grill. Use a little lower heat, so they cook through without burning. Then put a little butter, salt & pepper on them - YUM!!
Have you ever taken onions (vidalia the best but any will do)
and scooped out the center, browned some hamburger or sausage
and place in the center of the onion, put in just a little butter,
some worchestershire sauce, wrap in foil and then grill.
Really great - in fact almost a meal in it self.
Plums - Cut in half and pit. Brush with margarine and sprinkle a little brown sugar on them. Grill them for just a few minutes.

More Potatoes - Microwave them for a bit in flat, even, lengthwise
pieces; onions in fairly big pieces; yellow, red and green peppers and brush them with olive oil and a mixture of pepper, salt,
garlic powder, etc., and put them on the grill one of those special grill things that doesn't let little pieces fall through. If you have fresh herbs, (rosemary and thyme) sprinkle on while they're cooking. Its more hassle than wrapping with foil, but the end result is more flavor. Do yams on the grill with olive oil and fresh
herbs. Cuts them lengthwise and "nuke" them a bit beforehand. When they're almost done, sprinkle on a bit of brown sugar and they are DELICIOUS!
More Veggies and Potatoes - In aluminum foil sprayed with a non-stick spray, place some onions, peppers and "New" red or white
potatoes, cut into wedges, salt and pepper to taste, or "Garlic & Herb" by McCormick. Close the foil and place on grill for about 1hr. Check occasionally and respray if needed. Here's another. Follow directions above except use corn on the cob. It is
absolutly EXQUISITE!!!!
Breakfast SausageTake uncooked breakfast sausages, grill slowly,turning often. When almost done brush with maple syrup and continue grilling. DELICIOUS!
