Swiss Steak
Parmesan Pepper Steak


1-1/2 lb round steak
2 C water
1 6 oz can tomato paste
1 pkg beef stew seasoning

Brown steak on both sides. Add water, tomato paste and contents of beef stew seasoning packet. Simmer covered about 2 hours. YIELD: 4-6 servings.


1 beef round steak (1-1/2#) cut into thin strips
2 T (1/4 stick) margerine
1/2 C onion rings
1/2 C green pepper chunks
1 garlic clove, minced
1 can (8 oz) tomato sauce
1/4 C dry red wine or beef broth
1/4 t coarse ground pepper
1/4 C (1 oz) grated Parmesan cheese
2 T chopped fresh parsley

Brown meat in margerine in large skillet 2 minutes. Add onion, green pepper and garlic; cook and stir 2 minutes. Stir in tomato sauce, wine and coarse ground pepper. Bring to a boil. Reduce heat to low; cover and simmer 1 hour or until meat is tender, stirring occasionally. Sprinkle with Parmesan cheese and parsley.

YIELD: 6 servings
